Genever is a spirit that is only found in the Netherlands and the Flemish region of Belgium. It is a distant cousin of gin, served in a shot glass but sipped in the same manner as wine! It is actually protected under a law that means it can only be produced in these regions so you’re always getting the real spirit. We visited Cafe de Doelen, a typical Amsterdam ‘brown bar’.
