One cool and not so widely known activity to do in Hong Kong is a visit to the Jumbo floating restaurant. Situated in Aberdeen harbor on the south of HK island, you need to take one of the frequent shuttle ferries to get to the unusual finish experience. The cuisine is mainly seafood, and you can guarantee it's good and fresh! If you're not so keen on a fishy delight they also have a decent dim sum menu. It's pretty expensive so you can even just go for a casual drink there to check out the fabulous Chinese decor!
