Contrary to the modest exterior, the inside of this cathedral is very elaborate in a true Baroque fashion, depicting many scenes from the island's turbulent past. Go early as it tends to be busy later in the day. The back room has beautiful Caravaggio art, but since photography of any kind is forbidden in there, you'll have to go see for yourself.
