Biryani Many may not think of the royal Biryani, the fragrant rice dish layered with chicken, mutton or eggs as a street food. But Kolkata is different. The Kolkata biryani owes its existence to the exiled Nawab Wajid Ali Shah who was forced to move to British Kolkata in 1856 and brought the knowledge of the Lucknow biryani with him. With his diminished means but an urge to satisfy both tradition and his loyalists, the rich Awadhi biryani got a makeover with less spices and the addition of the humble potato making the Kolkata Biryani very different from its counterpart, the Hyderabadi Biryani.
