What are the must-dos in and around Melbourne and how long should I plan to stay in Melbourne? What is the coolest way to go up the great ocean road?

The coolest way is to walk it! :) Look up Great Ocean Walk. You can hike the entire thing (100km between the 12 apostles and Apollo Bay) or do sections. There are campsites every 15k or so, or you can stay in b&bs. You can arrange a shuttle, you can even arrange for people to deliver food/supplies… 
There is also a free city circle tram that takes you around the CBD, tells you about all the attractions, so you can jump on and off! Docklands is a nice area. Phillip Island is also nearby, if you wanna go see penguins!
Melbourne itself I would say three to four days preferably over a weekend!! ☺ Definitely check out the laneways filled with graffiti, have brunch, try the large variety of food available and bar hopping! Look up www.broadsheet.com.au and click on Melbourne it will have reviews and tell you what…

I rented a car to do the great ocean road and loved the freedom. Could stop at the beaches I liked and go up backroads into the woods and do hikes. While not exactly on the coast I did really love the Otway Fly Treetop ziplines. If you do stop at the Otway NouriShed for lunch. Fantastic meat pies… 
I had a car to do the great ocean road and it was perfect. Slept right in the back of it! Lots of freedom to stop wherever. I would check out Chapel street in Melbourne and St Kilda for sure!
