Ek Balam, Uxmal, Cichen Itza, Tulum. Coba was my favorite off the beaten track ruins. Valladolid used to be a magical and colorful colonial must see en route.

In addition to the above, make sure you take a dip/swim in the cenotes near Valladolid.
