"A spot of cream with your meat sir?" -Welcome to The Czech Republic. Svíčková na smetaně (sirloin steak in cream sauce) is an oddity to most outside The Czech Republic but a hearty, wholesome meal that leaves you with that feeling of contentment moments after you've fully digested it. Whether you consider it perfect mountain food, or ideal for a weekend luncheon; it will certainly set you up for the whole range of outdoor pursuits that Czechs engage in, almost religiously. The sauce constitute carrots, celeriac, onions and are peppered with juniper, bay leaf and allspice. What makes this dish stand out from its savoury Czech cousins is the blob of whipping cream stowed on a slice of lemon and cranberry. For those Brits in our midst the cranberry sauce won't be out of tune given how our olfactory is well accustomed to accompanying the red current delight with turkey at Christmas Time - but whipped cream! On balance the flavours danced around my palate like a boy and his candy floss and hot dog on a ferris wheel. The sweet and the savoury - when synthesised sensibly - work in perfect harmony and all cannot be the same without washing it down with a rather large Bernard beer on tap! Not only do I vouch for it being the best establishment in Liberec for this dish but echo the opinion of three other acquaintances, who candidly state the same. One Svíčková and local beer came to a very agreeable 162 Czech Koruna (5 GBP approx.). Staff were polite and are able to converse in English to a reasonable level. The hotel is conveniently located on the corner of the old town square on Moskevská Street. It is also easily reached five minutes on foot from the inner city bus terminal at Fügnerova, in the centre of town.
