This was one of the coolest and unexpected experiences I had in Thailand. I would never dare drive a motorcycle in many countries, but the traffic in the rural parts of Northern Thailand is light and the roads are great quality. This is definitely a high risk activity that tourists die doing every year. Go slow and watch for debris in the road (even a few leaves or pine needles can cause you to crash).
