Mindo should be on the map for every meat-free traveller. Given the teeny size of this town, and it's location in rural Ecuador (of all places), it's amazing to see how many restaurants and cafes don't just chuck a vegetarian/vegan option onto their menus as an afterthought, but go to great lengths to provide a plentiful and delicious variety.
