What are your favorite things to do / places to check out around Whistler on down days (not skiing) in the winter?

There are so many, Scandinave Spa is best for relaxing and there is zip lining and snow mobiling if you want a little exhilaration. The Audain art museum and a good explore of the village will take your mind off the slopes for the day and you should also check out the surrounding lakes too ... There really is so much to see and do
I second the Audain art museum. Beautiful new building with some amazing work. Don't miss it!
Head to The Fitz! I also agree that The Scandinave Spa is incredible, best Nordic spa I've been to. The Fitzsimmons Pub is located in Blackcomb village, laid back bar where the locals hang out. Did a day with a guide at Whistler, on a Matador press trip actually, and he talked about that bar literally all day.

the Fitz had a refurb in the last couple of years, it used to be that the occupancy was about 10 - it's a great little bar. I had artwork up there one season too. I highly recommend it.  Also check out GLC and Dubhlin Gate (best Guinness in town, if not a little on the pricier side) if… 
The Lil'wat cultural centre is a beautiful new First Nations museum worth a visit for its artwork and bannock! Brandywine Falls is also spectacular and very accessible to Whistler.
